As we all know, “espresso” means “made to order on the spot”. The speed with which the Italians’ national coffee is prepared lies with the special system of extraction, under pressure: this makes the coffee very concentrated and gives it that intense flavour and aroma that has made it famous throughout the world. A perfect espresso is a complex alchemy, in which the combination of a few elements (water, temperature, pressure, coffee) produces a result that is infinitely superior to the sum of the parts.
